Pastegh, Armenian fruit lavash
Pastegh is an Armenian fruit lavash, also called “ttu lavash”, that is, sour lavash. It is made from the pulp of ripe fruit and berries. Traditionally pastegh is made from cornelian cherries, cherry plums, plums, sour cherries and apples, so it is often sour. Pastegh made from mulberries, apricots, peaches, blackberries, raspberries or pears is rather sweet.
Pastegh should contain no sugar or starch: only boiled fruit pulp, a little water and plenty of sun.
The photograph shows pastegh sheets of different colours, folded into triangles, in a round wicker basket: red, orange, green and dark purple.
